1.鲅鱼洗净。

2.用刀片出两片鱼肉,取出鱼刺。

3.用刀把鱼肉刮下来。

4.放入大碗中。

5.刮好的鱼肉用刀剁成鱼茸放入大碗中备用。

6.关键的一点是要加一点猪肥膘肉和韭菜。

7.首先先把猪肥膘肉剁成茸和鱼茸放在一起。

8.和鱼茸放在一起,再加上葱姜末,少许五香粉,三勺盐,少许香油搅拌均匀,(下面的步骤很关键)。

9.然后边搅拌鱼茸(始终朝着一个方向搅拌),边向里面加清水,一次不要加太多。

10.持续搅拌直至上劲(总共要加大约500ml水)。

11.绞打上劲后再加入剁好的韭菜。

12.搅拌均匀。

14.然后再和面,我用的是石磨磨得全麦面所以颜色比较黑一些。

15.和好面盖上湿笼布饧20分钟。
